It’s summer and it’s hot! Sounds like its perfect time for Pisco. For my Summer Thyme cocktail I infused Pisco with thyme to give it some extra herbal notes. Pisco and pineapple make a great marriage.
In a shaker combine :
- 1.5 oz Thyme infused pisco
- 0.75 oz Lime Juice
- 0.75 oz Pineapple Syrup
- 0.75 oz Pink Grapefruit Juice
Add ice and shake. Strain over ice in a tall glass. Garnish with a pineapple slice.
There are different types of Pisco. For this cocktail I used Pisco Acholado which is created from a mixture of various grapes.
