This is a play on the classic cocktail Gold Rush. Instead of using just honey syrup I’m using both honey and ginger syrup. It makes a great combination. Ginger provides a little kick of spice that creates a great combination of flavors for January weather. Stay warm and enjoy it!
In a shaker combine :
2 oz of your favorite bourbon (I use Buffalo Trace)
1 oz Lemon juice
0.5 oz Honey Syrup
0.5 oz Ginger Syrup
Add ice and shake. Strain over a big cube. Garnish with a dehydrated lemon wheel.
Depending on what honey you use the flavor profile of the cocktail will change. I used tupelo honey. It's light and floral. If you're going to use a wildflower or other honey with a more intense flavor it may overpower the ginger and the bourbon.
Cheers!
